Dum handi chicken biryani is a flavorful one-pot dish cooked in a sealed pot to trap aroma and taste. Begin by marinating chicken with yogurt, ginger-garlic paste, turmeric, chili powder, garam masala, and salt. Let it rest for at least 1 hour.
Cook Gazal Rice until 70% done and set aside. In a heavy-bottom handi, heat ghee and sauté sliced onions until golden. Add marinated chicken and cook for 10 minutes. Layer partially cooked Gazal Rice over the chicken.
Sprinkle saffron milk, fried onions, mint, and coriander leaves. Seal the pot with dough or a tight lid and cook on low heat (dum) for 20–25 minutes.
Once done, gently mix and serve hot. The slow cooking process allows the flavors to blend beautifully, giving the biryani its signature aroma and taste.
